For Fumaiolo’s products, priority is given to short chain and certified Italian raw materials, such as organic spelt flour or numerous PDO products such as Grana Padano or Mortadella.

WE ONLY USE COLD
Fumaiolo products are natural, from the raw material to the table. The secret lies in the only preservation method chosen and used: cold. Freezing at origin guarantees the freshness that represents the company’s greatest added value.
SELECTED INGREDIENTS
Only selected ingredients are used in the pasta factory: for the pasta sheets, the best flours from Italian grains; for the dough of the gnocchi (and the fillings where they are required), real potatoes; for the other fillings, only cheeses from local dairies, the freshest spinach and fine meats. All production steps are carefully controlled to ensure that the processing does not compromise the quality of the raw materials.
FOR RESTAURATEURS
Fumaiolo fresh pasta is frozen without pasteurisation and with IQF (individual quick frozen) technology. This allows catering professionals to keep food costs under control, not wasting raw materials and using only the quantity of product needed.
FOR LARGE-SCALE DISTRIBUTION

The cold of the freezer preserves, conserves and combats food waste. Compared to products that can be found in the refrigerated counter, once purchased Fumaiolo fresh pasta loses nothing in terms of organoleptic characteristics and keeps for 12 months.
